docs: expand OAuth SCM setup with Auth Profile step-by-step guide - #1082

Replace the summary table in the Setup section with a full <Steps> walkthrough. Step 3 (Select an Auth Profile) now includes a screenshot of the SCM Directory Sync Auth Profile dropdown and a prominent warning about not skipping this step. Email claim guidance is folded into Step 2. Builds on top of PR #1081 (GitHub MCP example by Devansh0012).
