fix(deps): update pdf-inspector for RTL text extraction fix

Summary

Update pdf-inspector from 1.14.2 to 1.25.0 to include critical fixes for Hebrew/Arabic RTL text extraction.

Why

The current version (1.14.2) predates the RTL text extraction fixes in pdf-inspector#440 and #441. This causes Hebrew/Arabic text stored in visual order to be extracted reversed.

Changes

• Updated pdf-inspector dependency from 1.14.2 to 1.16.0+ (auto-resolved to 1.25.0)
• All 286 tests pass
