Description

This PR updates the ROS 2 Rolling macOS installation instructions for macOS 26. I tested these changes on my MacBook and updated the documentation accordingly:

  • Updated the prerequisites for building ROS 2
  • Removed outdated packages and added missing ones for Homebrew and PyPI
  • Moved the "Disable System Integrity Protection (SIP)" section into "System requirements" to align with the formatting of installation guides for other operating systems

Additional Information

If approved, please backport to downstream releases, I will create a new PR for them to update the dependencies

Hold until ros2/rviz#1751 had been merged

We currently support macOS Mojave (10.14).
The Rolling Ridley distribution will change target platforms from time to time as new platforms become available.
Most people will want to use a stable ROS distribution.

Have reverted the change, but I am unsure if it is a good idea to specific the macOS version, since it likely having a new version every year
