This pull request updates conference metadata in _data/conferences.yml to correct edition years and deadline details so the site’s displayed countdowns match the current published CFP information.

- Update Euro S&P to the 2027 edition (year, URL, and submission deadline).

Why
The ISSTA deadline used the wrong year. The Euro S&P record still described the previous edition, and the ACSW record combined a stale edition year with an older deadline. These corrections keep the displayed countdowns tied to the published conference information.
