Noticed the active v1.26.x Go toolchain has a lot of regression fixes that directly affect some of our dependencies
Trying to cleanly resolve to floating go toolchain in go.mod and dockerfile to allow using the current v1.26.7 instead of being stuck and pinned to v1.26.2
