feat(core): Disable OPTIONS request tracing by default

Change traceOptionsRequests to default to false in version 9 and add a regression test for the new default.

Applications that need transactions for HTTP OPTIONS requests can continue to opt in by setting the option to true.

💡 Motivation and Context

OPTIONS requests are commonly CORS preflight traffic and generally do not provide useful tracing data. Version 9 is the breaking-change boundary for aligning the Java SDK with the tracing specification, which defines this option as disabled by default.

• ./gradlew ':sentry:test' --tests="*SentryOptionsTest*" --info (143 tests passed)
